Zucchini Almond Hummus Wrap

 
My friend and I went to this amazing Raw Food Bar in Utah Omar's Rawtopia! It was seriously AMAZING! We shared the "Bean Burrito / Falafel" and "Tabouli / Hummus" Combos. The food was so fresh and utterly fabulous! I came home with a determination to create some similar dishes in my own kitchen! I started with this hummus! I was inspired that Omar's is made of sprouted almonds and I was also inspired by a recipe of Matt Amsden's that is zucchini based.  I "played" in the kitchen and ended up with this zucchini almond hummus! You can serve the raw hummus in cabbage or romaine leaves. I have added different combinations of veggies and sprouts depending on what I have in my fridge! My husband and I LOVE these and have even taken them on a picnic! I keep the leftover spread in my fridge for a quick lunch!

Zucchini Almond Hummus Wrap
4 small zucchini, ends removed and cut into big chunks
1/2 cup fresh lemon juice (approx 4 lemons)
1/4 cup EVOO
3/4 c raw tahini
3-4 cloves fresh garlic (depending on your spice comfort)
1 t salt
1/2 T cumin
1/2 t ground coriander (optional for additional spice)
1 cup almonds (soaked for 8 hours for added nutrients if desired)
Mix everything in a vitamix until smooth. Serve in cabbage or romaine leaves, garnished with desired combination of sprouts, grape tomatoes, avocado, bell peppers, carrots, etc.

Fresh RAW Tomato Salsa & Sprouted Tortilla Chips


Fresh RAW Tomato Salsa 
1/2 yellow onion
2-3 garlic cloves, minced
1/2 jalapeno, seeds removed (less/more depending on spice comfort)
1 10 oz carton grape tomatoes
juice of 1 lime
1 T extra virgin olive oil
1/2 t Himalayan salt
1/4 t cumin
pinch pepper
1 bunch cilantro, leaves only, roughly chopped
I like the texture of my salsa best when I make it in a food processor! Combine onion, garlic and jalapeno and pulse until finely chopped. Add remaining ingredients except cilantro and pulse until desired consistency. Add cilantro to mixture in a separate bowl and serve with sprouted tortilla chips, flax crackers, or veggies.

Sprouted Tortilla Chips

extra virgin olive oil spray
Himalayan salt
Preheat oven to 350 degrees. Cut sprouted tortillas into triangles with a pizza cutter. Place on baking sheet. Lightly mist with EVOO and sprinkle a bit of salt on top. Bake for 10 minutes or until crunchy.

Quinoa Zucchini Boats

With the abundance of fresh zucchini, I wanted to make a recipe to use it up! This turned out spectacular! 

Quinoa Zucchini Boats
1 1/2 cups water
3/4 c whole grain quinoa
1/8 t salt
1 can Italian tomatoes (S&W has no sugar added)
1 T pure maple syrup (grade B is the best)
1 t Italian seasoning
pinch salt and pepper
4 small zucchini
1 T extra virgin olive oil (EVOO)
1/2 onion, chopped
2 cloves garlic, minced
8 oz mushrooms, chopped
1 c spinach tightly packed, chopped
1/2 c zucchini "guts", chopped
1/2 c artichoke hearts, chopped
1/2 t Italian Seasoning

Boil water. Rinse quinoa and add to boiling water and salt. Cook for approximately 20 minutes. Preheat oven to 375 degrees. Make tomato sauce by adding tomatoes, maple syrup, Italian seasoning, salt and pepper to a vitamix and mix well. Pour mixture into a large baking pan. Take zucchini and cut off ends and slice in half. Scoop seeds and "guts" of the zucchini out with a spoon and save in a bowl. Place zucchini over tomato sauce.
In sauce pan, saute onions and garlic in EVOO for a few minutes.  Add mushrooms, spinach, zucchini, artichoke hearts, and Italian seasoning. Combine cooked quinoa to mixture. 
Place mixture in zucchini boats. Cover with foil and bake 30 minutes or until zucchini is tender.
