Haricot Verts & Fresh Corn

I absolutely love green beans, especially the French variety haricot verts. French green beans are longer and thinner than most American varieties. They are also more tender and have a more complex flavor. They were utterly delicious in the side dish I made with fresh corn today! 

Haricot Verts & Fresh Corn 
1 T EVOO
2 cups haricot verts
2 T water
1 corn cob, kernels removed
pinch garlic powder
salt and pepper
pinch herbes de provence (typically savory, fennel, basil, thyme, lavender)
 Heat olive oil and saute green beans for a few minutes. Add water, corn and seasonings. Saute until corn is lightly browned and green beans are cooked to desired tenderness.

Healthy Tip: Buy a Juicer

After I was inspired by the show "Fat, Sick, and Nearly Dead" I read several books on juicing, started researching juicers and bought a juicer! There are two main types of juicers: centrifigal and masticating juicers. They each have their benefits and you definitely need to decide what your needs are.  If you are truly interested in getting serious about juicing, I would check out the following...

In my opinion, here are the basic pros and cons of each...

Masticating Juicer
Pros: better at juicing greens, slightly more nutrition in juice, more quiet
Cons: more expensive, harder to clean, takes a lot more time and energy

Centrifugal Juicer
Pros: less expensive, easier to clean, fast

Cons: not as effective at juicing greens, shelf life of juice not as long

Price was a HUGE factor for me, as well as finding a juicer that was easy to clean and would also make juicing a super fast process. I personally went with a Centrifugal Juicer for now. I bought the Breville Juice Fountain Plus JE98XL because...it is a great juicer at a price I was willing to spend right now (I got a great deal- $120 with coupon), it is easy to clean, and has a 3" extra wide mouth feed shoot which makes juicing very easy and FAST!! I do LOVE it!! ...but, I also plan on eventually buying a masticating juicer so I can extract even more juice from my greens.  I plan on buying the Omega 8006 Juicer some day!! ($300) My sister has it and she loves it!

Pineapple Orange Strawberry Smoothie

Another delightful fruit smoothie for the summer!
Pineapple Orange Strawberry Smoothie
1 can pineapple in 100% pineapple juice (or fresh pineapple)
2 oranges (cut off peel ,but leave white pithe on)
2 cups strawberries
2 cups ice
Place everything in vitamix and blend until smooth! Makes 4 servings. Definitely a perfect cool summer drink!

Healthy Tip: Give Juicing a Try

There is nothing more healthier than eating raw, fresh fruits, veggies and greens...right!? Except for maybe juicing them!!  Proponents say that juicing is better for you than eating whole fruits and vegetables because your body can absorb the nutrients better and it gives your digestive system a rest from working on fiber. Juicing has been said to reduce your risk of cancer, boost your immune system, help you remove toxins from your body, aid digestion, and help you lose weight. The philosophy behind the juicing movement is that the juice from raw fruits and vegetables contains special enzymes that are good for the digestive system.

I have definitely enjoyed juicing! I think it is an excellent way to detoxify your body, as well as give your digestive system a break! I have felt more energy when I juice and I believe it has boosted my immune system as well!!  Go for it...give juicing a try!

Healthy Tip: Make Fun Veggie Trays

I honestly believe the more appetizing we can make veggies, the more our children (and us) will eat them! I always like to make fun veggie trays for holidays and parties.  Children especially tend to want to eat more veggies when they are presented in a fun way!

Zucchini Stirfry

I love baby zucchini squash, so when I found some I decided to make a delicious, quick and healthy stirfry...

Zucchini Stirfry
1 T EVOO
2 garlic cloves, minced 
4 baby zucchini, sliced
1 lb cremini mushrooms, quartered
1/2 container grape tomatoes
McCormick Tuscan seasoning
Heat olive oil in pan and saute garlic for a couple of minutes. Add other veggies and saute until tender. It does not take long! Sprinkle with Tuscan seasoning and serve. We had this for dinner with a salad and some tortillas.

"Healthy CAMPING" Tin Foil Dinners

We went camping over the weekend and of course I had to make veggie tin foil dinners! They are easy to throw together and they produce very little clean up. I made mine vegetarian, but added ground chicken to my husband and children's portions for a special treat! 

"Healthy CAMPING" Tin Foil Dinners
ground chicken (optional - 1/4 lb for each person)
sweet potatoes, peeled & sliced
onions, sliced
baby carrots, halved
garlic cloves, halved
green beans, trimmed
mushrooms, halved
zucchini, quartered
and/or any other veggies you have on hand!
EVOO
seasonings of choice
Build a fire or get some charcoal briquettes hot. For camping I wash, peel and cut everything before hand and put in baggies in the cooler. To prepare, take 2 large pieces (approx 12-18") of tin foil and one layer of parchment paper. Layer cooking spray and then meat and veggies of your choice. Top with a drizzle of olive oil and sprinkle with your favorite seasonings...I like the Kirkland "no salt seasoning", along with good ole salt and pepper. Wrap foil around food to create a little package for the food to steam inside of.  When you are ready to cook, your fire should be burned down to coals, or the briquettes to white hot. Place the foil dinner on the coals. If you have enough, place coals on top of the foil package also.

Cooking time will vary depending on your coals, how big you make your tin foil dinner, and the size/type of the vegetables. Cook for about 20 minutes and then turn package over. Cook 15 minutes more, remove from coals and carefully open to check to see if it is done. If not done, re-close, wrap another piece of foil around the package if needed and return it to the coals. Check again in another 10-15 minutes. When done, open and eat directly from the foil package. Super easy clean up and a delicious and healthy meal while camping! I never got a picture of the finished product, but it was visually stunning as well as delicious!

"Animal Food" Smoothie

This morning we were planning a trip to the zoo...so my son already has animals on his mind! For breakfast he suggested we make an "animal food" fruit smoothie!  He wanted it to have bananas and apples and pears like a monkey would eat...and then he decided he would add some pineapple since that is his favorite fruit!! I must say...it turned out fantastic!

"Animal Food" Smoothie
1 apple, remove core
1 banana
1 red pear
1 can pineapple in 100% pineapple juice (or fresh pineapple)
2 cups ice
Mix all ingredients in high speed blender. Serves 4.

Watermelon Grape Smoothie

With the weather warming up, we have been making lots of fresh fruit smoothies for breakfast or as a snack. We had some watermelon in the fridge and wondered what would go well with it...so I added some green grapes and it turned out fantastic! Thought we would share our easy recipe...all amounts are approximate since I do not ever really measure when I am concocting smoothies!

Watermelon Grape Smoothie
2 cups watermelon
2 cups green grapes
3 cups ice
Mix well in a high speed blender and serve immediately or it will start to separate! Serves 4.

Easy Pineapple Orange Smoothie

With all of the oranges we have been getting such a good deal on, we wanted to make a quick and easy orange smoothie...and what goes better with oranges than pineapple?

Easy Pineapple Orange Smoothie
1 can pineapple in 100% pineapple juice (or fresh pineapple)
2 oranges (cut off peel ,but leave white pithe on)
3 cups ice
Place everything in vitamix and blend until smooth and frothy! This recipe makes 4 servings (approx 12 oz each) This healthy, all fruit smoothie is super sweet and less than 120 calories per serving! I have a feeling we will be making many more of these this summer!

Healthy Tip: Eat Nuts!

Nuts are so good for you and definitely HEART HEALTHY! Nuts are rich sources of phyto­sterols, which are plant chemicals known to improve heart health. Nuts contain unsaturated fatty acids and fiber that help lower cholesterol and helps you feel more full. Nuts are also a source of l-arginine, which is a substance that may help improve the health of your artery walls and reduce your risk of developing blood clots. Nuts boost antioxidants in the body and lower your risk for diabetes.  Nuts are one of the best plant-based sources of omega-3 fatty acids.   They are an excellent snack food that is easy to store and great to take on the go.

Nuts are an excellent way to get healthy fat in your diet. Our bodies need some healthy fat, so eating nuts in moderation is a great heart healthy habit! Nuts are a great substitute for saturated fats, such as those found in meats, eggs and dairy products. Walnuts contain high amounts of omega-3 fatty acids. Almonds, macadamia nuts, hazelnuts, pecans and pistachios are other nuts that are quite heart healthy.

Creamy Cauliflower Soup

 If you know me, I LOVE cauliflower!  And I LOVE cauliflower soup!  I think my daughter loves it even more!! She was begging for it, so I made some...but tried adding some new spices and rice milk and ended up with another version! It turned out really smooth and creamy.  So here is my latest version of cauliflower soup...it has a luscious, velvety texture with lots of good spices!

Creamy Cauliflower Soup
1 T EVOO
1 medium onion, chopped
2 cloves garlic, minced
1/2 bunch celery, chopped with the leaves
1 head cauliflower, chopped
2 T fresh thyme

1/2 t herbs de provence
1/4 t Italian seasoning
salt and pepper,to taste
4 c vegetable broth
1 c rice milk
fresh parsley, chopped (optional for garnish)
Heat olive oil and sauté onion and garlic until translucent, about 5 minutes.   Add celery, cauliflower, thyme and other seasonings. Cook for 5-10 minutes until veggies are starting to get soft.  Add the broth and simmer for another 5-10 minutes or until the veggies are soft enough to pierce with a fork.  Remove from heat and purée in a blender, working in batches if necessary. (Note: use care when processing hot items in a blender as the hot steam can sometimes blow the blender lid off. Start on a slow speed with the lid slightly ajar to vent any steam, then seal the lid and increase the blending speed.  Or I like to put a towel on top of lid and hold tightly while I start blending slowly.) Return puréed soup to pot and adjust seasoning if necessary. Great with a little fresh parsley on top!  We served our soup with some fresh strawberries and had a lovely dinner!!

Healthy Tip: Eat At The Table

I think it is easy to not eat at the dinner table and instead eat in front of the television or eat in the car!! Stop it!   Not only will eating dinner with your family at the table make good conversation part of your meal, it will also mean several health benefits! Talking during a meal slows down the rate of food consumption. Studies also suggest that more family meals mean more fruits and vegetables. Eating in front of the television or while driving leads to mindless eating and of course overeating.

Kale & Brussels Sprouts Salad

  
I love Brussels sprouts, especially in soups, but I had never thought to make a salad out of them until I saw a recipe in my Power Foods book! This recipe is adapted and jazzed up a bit from that recipe. I made it for Mother's day and it turned out fantastic! It is super crunchy which I love in a salad, very healthy and a little sweet & sourness from the dressing...Perfect combo!!

Kale & Brussels Sprouts Salad
1 lb Brussels Sprouts, bottoms trimmed and finely sliced
4 large kale leaves, center stalk removed and finely sliced
1/2 cup raw sunflower seeds
1/4 cup dried cranberries, naturally sweetened

 Dressing
2 T fresh lemon juice
1 T grainy mustard
1 T pure maple syrup
2 T EVOO
salt & pepper
Mix dressing together and then add to greens right before serving.

Healthy Tip: Be Accountable

Accountability is an obligation or willingness to accept responsibility or to account for ones actions

It is definitely hard to be accountable in any area of life that requires willpower and discipline. Willpower is a finite resource, and we usually save it for when it really counts - that is, for when we will have to be showing results to people other than ourselves. This is why I believe it is crucial that you find someone to account to... such as a close friend, a relative, a significant other, or someone whose esteem you value. When you are sharing your journey-your successes and struggles-with someone else, it makes you more accountable to them and to yourself. You will always have an excuse for yourself, but other people won’t accept excuses so easily. Others can also cheer you on and help inspire you! I have several friends that I stay in contact with about my journey to health. This helps me stay motivated and be accountable to myself! It definitely is a motivating factor to be able to share my journey with someone else.

Our most favorite quick and easy meal is a burrito bar! There are so many variations you can make...this is what is pictured:
Wheat Tortilla

Wrap it up and serve! My children love this because they can make it anyway they want it!  It is always fun to create your one of a kind burrito!  We nearly always make some variation of this when we are entertaining guests as well!! There are MANY more things we add to our homemade burritos, depending on what is in our fridge and pantry...

Super Easy Smooth & Silky Bean Dip

My children like the taste of beans, but not the texture. In an attempt to make beans more appetizing, I created  my own "smooth and silky bean dip" in my Vitamix...it is amazing on burritos and as a dip for veggies and chips! We have tried several types of beans and loved them all!! Pictured is PINTO beans, which is my children's favorite (similar to refried beans without the lard.) We also really like black beans!

Smooth & Silky Bean Dip
one can of beans, rinsed and drained
1/4 cup water
seasonings (optional) like Himalayan salt, herbs, etc.
Mix in blender until smooth and silky. Heat on stove if you want to serve them warm. You can add seasonings if you'd like too!!

Tomato & Olive Sauce



1 T EVOO
3 cloves garlic, minced
1 small onion, diced
2 cans (15 oz) Italian diced tomatoes
4 T tomato paste
Real sea salt and cracked black pepper to taste
1 can (15 ounce) black olives
2 T fresh oregano
2 T fresh basil

Use this sauce over wheat pasta, or for a gluten free option use brown rice pasta. Boil water and cook pasta according to directions on box.  Heat olive oil in sauce pan and saute garlic and onions until translucent, approximately 5 minutes. Add diced tomatoes, tomato paste and seasonings and let simmer for about 10 minutes.  Add olives and fresh herbs and heat through.

Healthy Tip: Get Your Sleep!!

I have been an insomniac my entire life!!  I especially had a hard time going to sleep when I was in school. I would stay up and read a book nearly every night! It was crazy! I have always had a hard time sleeping and have never felt like I had good quality sleep or enough sleep.  When I did sleep, it was not for very long!

BUT...now that I have completely changed my diet, I have finally been able to go to sleep before midnight!  I average sleeping eight hours, feel much more rested, and wake up feeling renewed and full of energy!  I think rest is so important to our health. It rejuvenates our bodies and our minds. Though diet and exercise are critical components of a healthy lifestyle, getting enough sleep is very important to our health as well. Sleep is inherently linked with how we exercise, how we eat (and how much), and how we function on a daily basis. Getting the proper amount of sleep each night is necessary to face the world with your best foot forward. Sleep will help you on the road to good fitness, good eating and good health!! We need to get a restful night’s sleep. It is essential for our health, our thinking, and our weight-loss!!

Veggie Tin Foil Dinners

 Veggie Tin Foil Dinners
potatoes, sliced
baby carrots, halved
garlic cloves, halved
green beans, trimmed
yellow squash, cut into strips
zucchini, cut in to strips
mushrooms, halved
cherry tomatoes
and/or any other veggies you have on hand!
EVOO
seasonings of choice 
Preheat oven to 400 degrees.  Wash and trim all veggies.  Take a large piece (approx 12-18") of tin foil and layer with another large piece of wax paper on top.  
 
Layer the veggies of your choice and top with a drizzle of olive oil.  Sprinkle with seasonings...I like Italian seasoning, no salt seasoning, pepper and salt. Balsamic vinegar and fresh herbs are also good!
Fold the wax paper and roll in sides.  Then wrap foil around that to create a little package for the veggies to steam inside of.  Bake for approximately 45 minutes or until veggies are tender. The cooking time will depend on how big you built your tin foil dinner and also what you put in it! The harder veggies will take longer (like potatoes and carrots) while softer veggies cook more quickly (like the squash and tomatoes.) 
 You can open the package up and eat directly from it, or pile all the veggies on a plate!
Other veggies I have tried...sweet potatoes, corn, brussels sprouts, etc.  The sky is the limit! Create your own combinations of flavors and textures!!

Healthy Tip: Get the "Unhealthy" Food Out of Your Home

When I truly decided I wanted to live a more healthy lifestyle, one of the first things I did was get rid of all the unhealthy food in my pantry and fridge. I knew I was making a lifestyle change and I wanted to get rid of everything in my house that I did not want to eat so I would not be tempted!!

I started with my pantry...white flour, sugar, white pasta, white rice, anything with sugar in it, etc. Then I started getting rid of things in my fridge...cheese, cow milk, butter, sour cream, etc. It has helped me tremendously! And even though my children sometimes say we have "nothing to eat"...I know that this just means we only have "healthy" things to eat in our house and they want something to eat that is not so healthy!  I always know we will have plenty of chances to eat treats and other unhealthy food somewhere besides our own house!! This is what works for me!!

This is the second book I read on juice fasting. The book is well written, full of great information and easy to read. It is current and up to date information and another excellent read on juice fasting.

I really enjoyed watching the movie "Fat, Sick & Nearly Dead" and afterwards became quite interested in broadening my knowledge about juice fasting.  This was the first book I read on juice fasting.  It was very informative, an easy read, and gave a review of all the basic principles pf fasting. It offers a great discussion of what fasting is, the benefits of fasting, and the different types of fasts. It offers descriptions of how to begin, how long to continue and how to come off a fast. This book is also a great tool to learn how the body heals itself and detoxifies, what to expect as this occurs and what can be done to help the body during the cleansing process. I thoroughly enjoyed reading about juice fasting and what to do to start my own juice fast!

"Fat, Sick & Nearly Dead"

"Fat, Sick & Nearly Dead" is a highly inspirational show.  I enjoyed seeing the transformation eating good food & particularly JUICING can have on someone; not just by losing weight, but actually getting rid of debilitating diseases and taking medications!!  This show is what got me intrigued by juicing! Watch it today!

Healthy Tip: Freeze Bananas

 We use TONS of bananas in our house...mostly for GREEN SMOOTHIES!!  SO, whenever bananas go on sale, I stock up. I buy LOTS and then I freeze them so they will last!
 
After I buy the bananas, I remove them all from their bunches and let them sit out until they are ripe to get the best flavor!
 
Next I start my assembly line to get them ready to freeze! First, I peel all the bananas.
 Next, I break the banana in half and place it in its own individual plastic baggie.
Then I place all the small bags of bananas into one large freezer bag and stick it in the freezer.  The result is I have frozen bananas for my smoothie ALL the time...and at a GREAT price!!

Grilled Squash & Tomatoes

Grilled Squash & Tomatoes
1/4 cup EVOO
2 cloves garlic, smashed
2 yellow squash, cut into 1/4" slices
1 tomato, sliced
salt and pepper
balsamic vinegar
Heat live oil and garlic on stove for several minutes until garlic starts to sizzle. Brush squash with garlic oil and season with salt and pepper. Grill squash for approximately five minutes each side or until they have reached desired tenderness. Arrange squash and tomatoes on plate and drizzle with a little balsamic vinegar.

"Clean Out The Fridge" Meal

One of my favorite meals as a child was... fresh Utah peaches, fresh tomatoes from our garden with salt and pepper, fresh corn on the cob, and fresh squash from our garden with melted cheese!  Talk about FRESH...except for the cheese! :)  It was the perfect Summer dinner!

I think simple meals can often be some of the best!  My family and I often have what I like to call a "clean out the fridge" meal! This basically consists of cutting up a couple different kinds of fruit, along with finding several different veggies to chop up and/or cook. (I like to have some cooked and some raw if possible.) 

"Clean out the fridge" meals are extremely easy to prepare and do not require any planning. You can use up whatever extra veggies and fruits you have on hand, and it is definitely healthy!! Here is an example of such a meal we had this week...strawberries, pineapple, corn on the cob, vegetable oven fries, and salad! It was simple, yet satisfying!
 
 

Healthy Tip: Take Time To Enjoy Your Food

I believe it is critical to take time to enjoy our food during mealtimes. We tend to rush though our meals, forgetting to actually taste the flavors and feel the textures of our food. When we eat quickly, we tend to eat more. Instead of inhaling your food, eat and chew your food more slowly, savoring every bite. Remember to breathe while you eat and even put your fork down in between bites. It can be nice to simply reconnect with the joy of eating and enjoy a taste of slow!

I really like oven fries! They are easy to make and oh so delicious! I used sweet potato, white potato and carrots...but they would also be delicious with other veggies such as turnips, rutabagas, parsnips, brussels sprouts, and onions.

Root Vegetable Oven Fries
1 Sweet Potato
1 White Potato
3 Carrots
EVOO (Extra Virgin Olive Oil)
No-Salt Seasoning
Himalayan Pink Salt
Peel all vegetables and cut into "fries." Make them as thick or as thin as you would like. 
 
Spread vegetables out on a baking sheet. Toss with EVOO and then season liberally.  I really like the Kirkland brand "no-salt" seasoning. There are 21 spices so it really adds a lot of flavor!! I also add some Himalayan pink salt!
 
Bake at 425 degrees for 20 minutes.  Turn veggies over and bake another 15 minutes or until desired texture.

Healthy Tip: Try Not To Make Anything Completely Off Limits

I think it is important to not make any certain food completely off limits. When you ban certain foods or food groups, it is natural to at first want those foods more and then feel like a failure if you give in to temptation. If you are drawn towards sweet, salty, or unhealthy foods, start by reducing portion sizes and not eating them as often. Later you may find yourself craving them less or thinking of them as only occasional indulgences.

Instead, simply keep ADDING healthy foods to your diet and that will naturally crowd out the bad things!!
