Grilled Squash & Tomatoes
1/4 cup EVOO
2 cloves garlic, smashed
2 yellow squash, cut into 1/4" slices
1 tomato, sliced
salt and pepper
balsamic vinegar
Heat live oil and garlic on stove for several minutes until garlic starts to sizzle. Brush squash with garlic oil and season with salt and pepper. Grill squash for approximately five minutes each side or until they have reached desired tenderness. Arrange squash and tomatoes on plate and drizzle with a little balsamic vinegar.
