Zucchini Stirfry

I love baby zucchini squash, so when I found some I decided to make a delicious, quick and healthy stirfry...

Zucchini Stirfry
1 T EVOO
2 garlic cloves, minced 
4 baby zucchini, sliced
1 lb cremini mushrooms, quartered
1/2 container grape tomatoes
McCormick Tuscan seasoning
Heat olive oil in pan and saute garlic for a couple of minutes. Add other veggies and saute until tender. It does not take long! Sprinkle with Tuscan seasoning and serve. We had this for dinner with a salad and some tortillas.
