Asian Noodle Veggie Salad with Ginger Dressing

 
Asian Noodle Veggie Salad
1/2 box whole wheat linguine, cooked rinsed & cooled
1 cup red cabbage, chopped 
1 cup napa cabbage, chopped
1 cup baby spinach
1/2 red pepper, chopped
1/2 orange pepper, chopped
1/2 yellow pepper, chopped
1/2 cup celery, sliced
1 cucumber, chopped
2 carrots, chopped
1/2 c bean sprouts
1 cup soybeans (non gmo)
1 cup cashews 
1 cup cilantro, chopped
2 T sesame seeds

Ginger & Soy Dressing
4 T EVOO
2 T nama shoyu
2 T fresh ginger, chopped
2 cloves garlic, minced
 1 lime, juiced
2 T honey
 salt & red pepper to taste
1 jalepeno, chopped (optional to add more heat)

Mix all ingredients together and serve cold.
